Where We’re Based
Our head office is in Clonmel, the home of the very first James Whelan Butchers shop and the enduring heart of our family business.
As a fifth generation butchery business, our roots run deep, in farming, in craft and in community. From the beginning, we have believed that a butcher is not simply a retailer, but a steward of relationships, with farmers, producers, customers and place.
Clonmel is more than a base for us. It is where our standards were shaped, where our name was earned and where our responsibility to the wider community continues to guide how we grow.

Where We Source Our Meat
Our approach to sourcing is built on long term relationships, not short term transactions. We believe in knowing our farmers, understanding their practices and standing over the standards we promise to our customers. Provenance matters. Transparency matters. Craft matters.
We source the majority of our meat from Ireland, working closely with trusted farming partners who share our values of quality, animal welfare, sustainability and integrity.
We are founders of The Tipperary Food Producers and we proudly support and advocate seasonal growers, artisan makers and emerging suppliers, giving them space on our shelves when their products meet our standards and tell a story worth sharing. By doing so, we help sustain local enterprise and contribute to a vibrant Irish food community.
Spain holds a special place in our story — not as an exception to our values, but as a partner in our pursuit of extraordinary food.
Through a long-standing relationship with specialist breeders there, our connection to the world of Wagyu first took root more than twenty years ago. What began as a shared passion for remarkable genetics and patient husbandry has grown into a quiet partnership across borders. Together we have nurtured Wagyu cattle on our own farm, guided by knowledge that traces its lineage back to Japan and refined through the expertise of our Spanish partners. It is a story of patience, craft and an unwavering commitment to excellence.
Spain is also the home of another treasure we proudly source — the remarkable Iberico pig. Raised from unique bloodlines and nourished on its distinctive natural diet, Iberico pork carries a flavour that is unmistakable and deeply rooted in place and tradition.
