Take around 12 rashers and stretch them a little with the back of a knife. Rub the turkey with butter and season with salt and pepper. Place in the roasting tray. Lay 6 rashers at a horizontal angle. Now weave the other rashers, one by one, vertically through the others. Cover the turkey with foil as it cooks. 20 minutes before the turkey is cooked, remove the foil and let the bacon crisp-up beautifully.
