Here, centuries of handed-down craft are brought to life, and you are invited behind the glass to share in a Master Session with our in-house Signature Butchers, where skill, story, and tradition meet in a setting designed to be savoured.
Eolas is the Irish word for knowledge, and in the Eolas Room you will meet one-to-one, for a private appointment with a Signature Butcher of your choosing. Once inside, the magic, the wonder, the secrets, the heritage, the native provenance, the finest cuts, the seasonal flavours, the perfect serves, and the artistry of the butchers’ craft will be revealed to you, up close and in person.
This is more than a room. This is more than knowledge.

How it works:
Your journey begins by booking or gifting a Master Session, exclusively available through our James Whelan Butchers App. You can choose the day, the time, the Signature Butcher, and let them know if there are any cuts, charcuterie, salt-aged meats, or particular questions you would like to know more about.
Your booking payment is returned to you in impeccable, hand cuts for you to take home filled with eolas about their terroir, ageing, curing, cut, and cooking.
Once you are welcomed behind the glass, you’ll receive the undivided guidance of your Signature Butcher and craft a relationship that will sustain through time, allowing you to elevate your knowledge and your meals. You will also explore new ideas, discover new flavours, and gather insights gained over generations of expertise and passion.
