Your Journey

Year 1: Living the Culture

Before lectures and textbooks, your journey begins at the heartbeat of James Whelan Butchers — where food is never just a product, but a conversation between craft, care, and connection.

Here, you’ll inherit generations of practice: the quiet pride in sharpening a blade, the dignity of serving customers with respect, and the camaraderie of colleagues who become family. Every cut, every gesture, carries weight — for sustainability, for quality, and for the people who experience your work.

This first year is more than skill-building; it’s an awakening. You’ll discover that a butcher’s block can teach integrity as much as technique, and that purpose lives in the craft, the care for others, and the stewardship of the planet.

By the time you enter the academic programme with MTU, you won’t just be prepared to study — you’ll be grounded in experience, fluent in culture, and ready to carry forward a legacy that sees food as meaning, not matter.

Year 2: Building Knowledge and Skills

In your second year, skill becomes fluency, and curiosity becomes your compass. Between the digital classroom and the butcher’s block, you’ll explore meat not just as product, but as story — its origins, transformation, and place in culture.

This is where your journey with Munster Technological University’s pioneering BA in Sustainable Butchery and Gastronomy begins — the first of its kind in Ireland and globally. Academic study challenges you to think critically and collaboratively, connecting theory to practice, tackling global questions of sustainability, ethics, and food systems, and applying insights directly with peers and colleagues on the shop floor.

You’ll see how craft meets innovation, and how every choice — from trimming with care to sourcing responsibly — carries weight. Leadership, sustainability, creativity, and collaboration are lived here, not taught as abstract concepts.

By year’s end, you’ll carry sharper skills, deeper knowledge, and a renewed sense of purpose: ready to be part of a new generation of food custodians, fluent in both practice and theory, where global vision meets local action.

Year 3: Leading with Vision

By Year Three, your learning becomes a seamless blend of practice, theory, and vision. Ideas are lived, tested, and measured against the realities of a thriving craft and business.

This is the year you step fully into the wider landscape of food: understanding sustainable supply chains, applying financial and operational insight, and seeing how responsibility and profitability can go hand in hand. Collaboration is central — mentoring, sharing, and learning with peers, uncovering that leadership is as much about listening as guiding.

At the heart of the year lies your industry sustainability project — a live challenge that allows you to shape solutions with real impact for James Whelan Butchers and the wider food world. By the end, you will carry not just skills and knowledge, but the confidence and vision to lead, innovate, and make change tangible in every choice you make.

Year One & Two: Immersive Residential Learning

In both your first and second years, you’ll take part in a one-week residential learning block — a pivotal point in your journey. Here, you’ll step out of the day-to-day routine and immerse yourself in intensive learning, working side by side with industry professionals.
