Year 2: Building Knowledge and Skills
In your second year, skill becomes fluency, and curiosity becomes your compass. Between the digital classroom and the butcher’s block, you’ll explore meat not just as product, but as story — its origins, transformation, and place in culture.
This is where your journey with Munster Technological University’s pioneering BA in Sustainable Butchery and Gastronomy begins — the first of its kind in Ireland and globally. Academic study challenges you to think critically and collaboratively, connecting theory to practice, tackling global questions of sustainability, ethics, and food systems, and applying insights directly with peers and colleagues on the shop floor.

At the heart of the year lies your industry sustainability project — a live challenge that allows you to shape solutions with real impact for James Whelan Butchers and the wider food world. Year One & Two: Immersive Residential Learning
