Butchery is a skilled craft that requires patience, discipline, and respect for the animal. Our Master Butchers teach apprentices, share knowledge, and uphold standards developed over decades. Pat Whelan helped establish the Tipperary Food Producers Network, bringing together farmers and artisans who share a commitment to collaboration, Irish terroir, and high standards. We see this spirit in farmers helping each other, producers sharing knowledge, colleagues supporting one another, and customers returning for connection as much as quality. Strong communities create strong food systems, and strong food systems create strong futures.
