I have just finished a salt aged Cote de Boeuf and it was outstanding. In my opinion more flavour than Wagyu. While Wagyu is wonderfully tender and melts in your mouth, the salt aged Cote de Boeuf has a depth of flavour that is near historic. I sear it on a very hot pan and then transfer to the oven for 15 mins with a meat thermometer. then back to the pan for one mi ute of butter basting. Served with green beans, mushrooms and hand made chips and a half bottle of Ripasso. Magic. Cant wait for my next order.
