Native to the Iberian Peninsula, this pork is marbled similar to wagyu beef. These black Iberico pigs are allowed to roam oak forests and enjoy a diet of herbs, grasses and cereal. In combination with this diet, the marbling gives this free range Iberico pork an incredibly luxurious flavour and tenderness. Like wagyu, Iberico shares the similar health benefits with a high concentration of healthy monounsaturated fats. Having receieved a Great Taste Star Award, here's what the judges had to say:
"A very delicious crackling with good clean fat. The pork is very simple and pure. The whole thing is lifted by the fat - there is a good tenderness to the lean meat".
