Some Simple Steps:
- Preheat the fan oven to 180°C
- Lightly season the chicken with salt and pepper
- Cover with parchment paper
- Cover with tinfoil, shiny side down
- Cook for 44 mins per kg and add 20 mins
- Remove tinfoil and parchment paper for the last 20 mins
- Cook to a core temperature of 75°C
- Remove and loosely wrap in tinfoil, shiny side down
- Allow to rest for 20 mins before carving
