How to Cook Free-Range, Slow-Raised, Irish Hubbard Unstuffed Chicken

Some Simple Steps:

  • Preheat the fan oven to 180°C
  • Lightly season the chicken with salt and pepper
  • Cover with parchment paper
  • Cover with tinfoil, shiny side down
  • Cook for 44 mins per kg and add 20 mins
  • Remove tinfoil and parchment paper for the last 20 mins
  • Cook to a core temperature of 75°C
  • Remove and loosely wrap in tinfoil, shiny side down
  • Allow to rest for 20 mins before carving
