Cooked with a crispy skin, and served perhaps with an orange and dill sauce, duck always makes for a great special occasion meal. For a different duck dish use cold fillets to make a sensational salad - just slice the breasts thinly and toss with crisp lettuce, segments of orange and onion rings.
