{"id":6807,"date":"2014-09-29T09:28:44","date_gmt":"2014-09-29T08:28:44","guid":{"rendered":"http:\/\/www.jameswhelanbutchers.com\/info\/?p=6807"},"modified":"2015-01-12T12:05:02","modified_gmt":"2015-01-12T11:05:02","slug":"know-your-spuds","status":"publish","type":"post","link":"https:\/\/www.jameswhelanbutchers.com\/info\/6807\/know-your-spuds\/","title":{"rendered":"James Whelan Butchers: Know Your Spuds"},"content":{"rendered":"<p>October 3<sup>rd<\/sup> is National Potato Day; a day to celebrate the spud.\u00a0 Not the most glamorous of national days perhaps, but despite the fact that it is probably a promotional notion dreamt up by potato growers, why shouldn\u2019t it have its own day?\u00a0 There was a time in Ireland when every day was National Potato Day but the world has evolved and pasta, rice cous cous and a host of other grains have muscled in on the potato\u2019s patch.\u00a0 Also the spud\u2019s criminal association with its fiendish friend, BUTTER, hasn\u2019t helped its reputation in the health conscious and fat fighting communities.\u00a0 It\u2019s high time someone spoke up for the spud and even the dairy company that it keeps.\u00a0 It\u2019s time we stopped vilifying a perfectly good food and enjoyed its versatility.\u00a0 Here\u2019s to National Potato Day; I declare myself a supporter.<\/p>\n<p>Potatoes have been part of European cuisine for a few centuries now.\u00a0 In Ireland we have the legendary Sir Walter Raleigh to thank for bringing us the first spud.\u00a0 Where would the Sunday Roast be without at least one side dish of some sort of potato, be it roast, mashed, croqueted or all three in some excessive cases.\u00a0 What would have become of the fish had we not put it together with the chip?<\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/10\/potatoes.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-3676 alignleft\" title=\"Potatoes\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/10\/potatoes.jpg\" alt=\"Potatoes\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/10\/potatoes.jpg 300w, https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/10\/potatoes-150x150.jpg 150w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>The potato originated in South America and at first was thought of as an ornamental plant.\u00a0 Once its true value was discovered it was hard to believe how tasty, versatile, economical and nutritious the yield could be.\u00a0 A potato has good levels of Vitamin B and C, is a good carbohydrate and a good source of iron and potassium along with other minerals.\u00a0 There\u2019s no fat in the potato and due to its dense nature it can fill you up.<\/p>\n<p>Various varieties have been created so throughout the year we can also enjoy the subtle differences in taste and texture.\u00a0 I always look forward to the new potato but equally I can enjoy a plate of winter mash or a large jacket potato baked in the oven.\u00a0 Some varieties are better for chips and others are ideal for salads.\u00a0 Whatever your preference, floury or waxy, there is a potato variety for everyone.<\/p>\n<p>Before the advent of the fridge many people stored spuds in a potato box in a darkened cellar or a shed.\u00a0 If you have such a place (that\u2019s not centrally heated) then you could still do it.\u00a0 Ideally you can keep potatoes in your fridge and they will last but I think it\u2019s best to use them relatively quickly once you\u2019ve bought them.<\/p>\n<p>Having mentioned all the good and virtuous things about potatoes it\u2019s time to move on to something a whole lot sexier. You\u2019ve probably guessed already that some of my favourite potato dishes involve a whole lot of fat; oh yes when the spud hooks up with a little dairy or fat, either animal or vegetable, it means a good time for all. Goose fat, dripping, olive oil, sunflower oil, butter, milk or cream all work well.\u00a0 (If you find yourself frothing at the mouth because I mentioned the \u2018F\u2019 word or finding the above akin to food porn then stop reading now, it\u2019s about to get a whole lot worse.)\u00a0 They could take me out and whip me before I\u2019d ever suggest that creamy mash can be achieved with anything other than full fat butter and full fat milk. There, I\u2019ve said it.\u00a0 Forget all your substitutes, let\u2019s just do it properly and indulge.\u00a0 If you\u2019ve ever wondered how high end restaurants achieve excellent lump free mash or \u2018Potato puree\u2019 as it often appears on the menu, well some use butter, milk and an egg yolk and sometimes even a sneaky spoon of sugar.\u00a0 For perfect potato puree try the following.\u00a0 Boil the potatoes in their skins in salted water for about 20minutes.\u00a0 Pour off the water, drain and peel.\u00a0 Mash them, or preferably, put them through a potato ricer.\u00a0 Put the mash back into the saucepan and for every kg of potato (uncooked weight) use 30g butter, 250 ml milk and 1 egg yolk.\u00a0 Stir all of these ingredients into the potatoes over a low heat.\u00a0 Add the salt, sugar (about a tablespoon per kg) and a little nutmeg at the end to season and if you want to really achieve excellent puree then beat the whole lot with a metal whisk.<\/p>\n<p>Another favourite of mine is Potato Gratin.\u00a0 (I can hear the sharp intake of breath from fat fighters).\u00a0\u00a0 Creamy, garlic-y, thinly sliced potatoes are always indulgent and seem to be an all time favourite.\u00a0 There are many different recipes for this but I like to use a mix of full fat cream, cr\u00e8me fraiche and an egg all mixed together and poured over the thinly sliced potatoes and fresh garlic.\u00a0 I slice the potatoes quite thin.\u00a0 Despite some recipes saying 30 minutes I think this needs about 45 minutes at 180 in order to cook the potatoes properly.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-2286 alignright\" style=\"border-style: initial; border-color: initial; cursor: default; float: right; border-width: 0px;\" title=\"Potato Gratin\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/03\/potato-gratin.jpg\" alt=\"Potato Gratin\" width=\"225\" height=\"169\" \/><\/p>\n<div>The Spanish have taken the egg and potato mix to its zenith with the Spanish Tortilla.\u00a0 Exploring what other cultures do with potatoes is always a revelation and I would certainly encourage you to do so.\u00a0 I hope this has inspired you to revisit the spud, enjoy National Potato Day and whether it\u2019s a simple chip or a lovely roast spud don\u2019t forget to pop into James Whelan Butchers in Oakville or stop by our website online and pick up something nice to go with it. <a href=\"https:\/\/www.jameswhelanbutchers.com\">www.jameswhelanbutchers.com<\/a>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
