Brining your turkey prior to cooking will help ensure you end up with a deliciously moist and flavor-packed turkey this Christmas.<\/p>\n<h2>What you need to know about brining<\/h2>\n<p>The first step in the process is selecting your brine recipe. This recipe\u00a0\u00a0is a simple and versatile choice that works. Once you\u2019ve selected your brine you\u2019ll need to:<\/p>\n<ul>\n<li>Purchase a fresh turkey .<\/li>\n<li>The night before roasting rinse the turkey inside and out.<\/li>\n<li>Prepare your brine. Be sure to mix ingredients until all of the salt is dissolved.\u00a0 If your brine is heated, be sure to cool it to room temperature.<\/li>\n<li>Place your turkey, breast down, in a large container made of food-grade standard.<\/li>\n<li>Add your brine, to cover the entire turkey.<\/li>\n<li>Place in the refrigerator overnight.<\/li>\n<li>Remove turkey from brine, rinse and pat dry with paper towels. Cook turkey as desired.<\/li>\n<\/ul>\n<h2>Ingredients<\/h2>\n<ul>\n<li>8 cups water<\/li>\n<li>1\/4 cup sea or kosher salt<\/li>\n<li>2 tablespoons granulated sugar<\/li>\n<li>2 lemons, cut in half<\/li>\n<li>3 bay leaves, preferably fresh<\/li>\n<li>8 garlic cloves, crushed and peeled<\/li>\n<li>2 tablespoons fresh thyme leaves<\/li>\n<li>1 tablespoon black peppercorns<\/li>\n<\/ul>\n<div>Makes approximately 8 cups<\/div>\n<h2>To Cook<\/h2>\n<p>Combine all of the ingredients into a large saucepan and bring to a boil.
