{"id":5730,"date":"2013-11-27T12:04:00","date_gmt":"2013-11-27T11:04:00","guid":{"rendered":"http:\/\/www.jameswhelanbutchers.com\/info\/?p=5730"},"modified":"2017-10-19T18:30:29","modified_gmt":"2017-10-19T17:30:29","slug":"chicken-cacciatore","status":"publish","type":"post","link":"https:\/\/www.jameswhelanbutchers.com\/info\/5730\/chicken-cacciatore\/","title":{"rendered":"James Whelan Butchers: Chicken Cacciatore"},"content":{"rendered":"<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/11\/Chicken-Cacciatore.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-5731\" title=\"Chicken Cacciatore\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/11\/Chicken-Cacciatore.jpg\" alt=\"Chicken Cacciatore\" width=\"225\" height=\"169\" \/><\/a><\/p>\n<p>In Italy, where this dish is considered a classic, it is often referred to as Hunter\u2019s Stew.\u00a0 That name alone tells us all we need to know about this warm, satisfying dish.<\/p>\n<p><strong><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/11\/Chicken-Cacciatore.pdf\">Chicken Cacciatore &#8211; Printer Friendly Download<\/a><\/strong><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>6 chicken thigh pieces<\/li>\n<li>Salt and pepper<\/li>\n<li>2 tablespoon olive oil<\/li>\n<li>1 onion finely chopped<\/li>\n<li>2 cloves garlic crushed<\/li>\n<li>\u00bd cup dry white wine<\/li>\n<li>1 \u00bd tablespoons vinegar<\/li>\n<li>\u00bd cup chicken stock or water<\/li>\n<li>2 tablespoons basil chopped<\/li>\n<li>1 teaspoon sugar<\/li>\n<li>400 g can\u00a0 peeled tomatoes<\/li>\n<li>3 anchovy fillets<\/li>\n<li>\u00bc cup milk<\/li>\n<li>60 g black olives<\/li>\n<li>2 tablespoon chopped parsley<\/li>\n<\/ul>\n<h2>To Cook<\/h2>\n<p>Preheat the oven to 180\u00b0C\/350\u00b0F\/Gas Mark 4<\/p>\n<p>Heat the oil in a heavy based pan and brown the chicken all over.\u00a0 This should take about 10 minutes.\u00a0 Remove the chicken from the pan and place in an ovenproof dish.\u00a0 Pour off most of the pan juices and add the onion and garlic.\u00a0 Cook until the onion is soft and aromatic.<\/p>\n<p>Add wine and vinegar and boil until reduced by half.\u00a0 Add the stock or water and cook for 2 minutes or so.<\/p>\n<p>Push tomatoes through a sieve and add the liquid to the pan with the basil, sugar and seasonings.\u00a0 Cook for 5 minutes or so, until well combined and simmering and then pour tomato mixture over the chicken.\u00a0 Cover and cook in a moderate oven for 1 \u00bd hours.<\/p>\n<p>Meanwhile soak the anchovy fillets in the milk for 5 minutes and drain.<\/p>\n<p>When the chicken is cooked, remove it from the oven and arrange the pieces on a serving dish and keep warm.\u00a0 Pour juices into a saucepan and bring to the boil for 1 minute.<\/p>\n<p>Finely chop the anchovies and add to the pan along with the olives and parsley.\u00a0 Pour the sauce over chicken pieces and serve with pasta.<\/p>\n<p>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
