{"id":5721,"date":"2013-11-22T11:30:16","date_gmt":"2013-11-22T10:30:16","guid":{"rendered":"http:\/\/www.jameswhelanbutchers.com\/info\/?p=5721"},"modified":"2017-10-19T18:33:20","modified_gmt":"2017-10-19T17:33:20","slug":"coq-au-vin","status":"publish","type":"post","link":"https:\/\/www.jameswhelanbutchers.com\/info\/5721\/coq-au-vin\/","title":{"rendered":"James Whelan Butchers: Coq Au Vin"},"content":{"rendered":"<p><strong><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/11\/coq-au-vin.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-5723\" title=\"coq au vin\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/11\/coq-au-vin.jpg\" alt=\"coq au vin\" width=\"225\" height=\"169\" \/><\/a><\/strong><\/p>\n<p>This is a classic French dish.\u00a0 While sounds fancy, it is simply a delicious chicken casserole braised in red wine.<\/p>\n<p><strong><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/11\/Coq-au-Vin.pdf\">Coq au Vin &#8211; Printer Friendly Download<\/a><\/strong><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li><a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6319\">1.5 kg chicken cut into 8 pieces<\/a><\/li>\n<li>2 carrots sliced<\/li>\n<li>2 celery stalks sliced<\/li>\n<li>18 shallots peeled and left whole<\/li>\n<li>1 bouquet garni (1 bay leaf, 4 sprigs thyme, 4 sprigs parsley tied with string)<\/li>\n<li>1 tablespoon coarsely ground black pepper<\/li>\n<li>750 ml red wine<\/li>\n<li>2 tablespoons plain flour<\/li>\n<li>4 tablespoons olive oil<\/li>\n<li><a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6402\">200 g streaky bacon rashers cut into pieces<\/a><\/li>\n<li>350 g small mushrooms<\/li>\n<\/ul>\n<p><strong>To Cook<\/strong><\/p>\n<p>Preheat the oven to 180\u00b0C\/350\u00b0F\/Gas Mark4<\/p>\n<p>Place the chicken, carrots, celery, onions, bouquet garni and pepper into a large bowl.\u00a0 Pour over the wine.\u00a0 Leave it to stand overnight or at least for a few hours in the fridge.<\/p>\n<p>Drain the chicken and vegetables, reserving the wine.\u00a0 Pat dry the chicken pieces.\u00a0 Heat half the oil in a heavy based frying pan.\u00a0 Add the chicken and brown well all over.\u00a0 Remove the chicken to a casserole dish.\u00a0 Add the carrots, celery and onions to the pan and cook for 5 minutes or so until lightly coloured. At this point stir in the flour and gradually add the reserved wine and bring to the boil, stirring constantly.\u00a0 Pour this mixture directly over the chicken.\u00a0 Cover and cook in the oven for 1 hour or so until the chicken is tender.<\/p>\n<p>Meanwhile, heat the remaining oil in a pan and fry the bacon pieces for a minute or so, before adding the mushrooms for a further 5 minutes.<\/p>\n<p>When the chicken is cooked remove the casserole from the oven.\u00a0 Add the bacon and mushrooms and sprinkle with freshly chopped herbs if desired.<\/p>\n<p>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
