{"id":5493,"date":"2013-10-14T11:00:59","date_gmt":"2013-10-14T10:00:59","guid":{"rendered":"http:\/\/www.jameswhelanbutchers.com\/info\/?p=5493"},"modified":"2017-01-26T18:00:17","modified_gmt":"2017-01-26T17:00:17","slug":"moussaka","status":"publish","type":"post","link":"https:\/\/www.jameswhelanbutchers.com\/info\/5493\/moussaka\/","title":{"rendered":"James Whelan Butchers: Moussaka"},"content":{"rendered":"<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/10\/moussaka.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-5494\" title=\"Moussaka\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/10\/moussaka.jpg\" alt=\"Moussaka\" width=\"225\" height=\"169\" \/><\/a><\/p>\n<p>Moussaka is a traditional Greek dish and you will find many varying recipes.\u00a0 This one is not difficult to prepare but it can be a little time consuming, however it is well worth the effort and always looks impressive when serving.<\/p>\n<p><strong><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/10\/Moussaka.pdf\">Moussaka Printer Friendly Download<\/a><\/strong><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 kg minced lamb<\/li>\n<li>\u00bd\u00a0 cup\u00a0 olive oil<\/li>\n<li>1 large onion finely chopped<\/li>\n<li>2 cloves garlic finely chopped<\/li>\n<li>1 cup skinned and chopped tomatoes or 1 can tomatoes<\/li>\n<li>2 tablespoon tomato paste<\/li>\n<li>1 bay leaf<\/li>\n<li>1 small onion studded with 3 cloves<\/li>\n<li>\u00a0Salt and pepper to taste<\/li>\n<li>1 teaspoon sugar<\/li>\n<li>2 large aubergine<\/li>\n<li>3 tablespoons plain flour<\/li>\n<li>\u00bd litre white sauce<\/li>\n<li>2 tablespoons cheddar cheese<\/li>\n<\/ul>\n<h2>To Cook<\/h2>\n<p>Heat 2 tablespoons of oil in a heavy based pan and add the meat.\u00a0 Cook for several minutes until browned and then add the onion and garlic.\u00a0\u00a0 Continue to cook until the onion is soft.\u00a0 Add the tomatoes, tomato paste, bay leaf, clove-studded onion, seasonings, sugar and a \u00bd cup of water. Cover and simmer for 30 minutes or so.<\/p>\n<p>Cut the aubergine into slices and sprinkle with salt.\u00a0 Stand for 30 minutes to release the juices then wash, drain and pat dry. Dip the aubergine slices into the flour.\u00a0 Heat the remaining oil in a pan and add the aubergine.\u00a0 Fry until golden.<\/p>\n<p>Arrange a layer of the aubergine slices over the base of a rectangular oven-proof dish and top with half the meat mixture.\u00a0 Repeat the layers, finishing with the aubergine slices.<\/p>\n<p>Make up a batch of white sauce.\u00a0 Stir in the cheese.\u00a0 Spread over the top of the dish as the final layer.\u00a0 Sprinkle with extra cheese if desired.<\/p>\n<p>Bake in a preheated oven 180\u00b0C\/350\u00b0F\/Gas Mark 4 for 30 minutes.<\/p>\n<p>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
