It is a nutritious, comforting stew and particularly good with crusty bread to mop up the juice.<\/p>\n<p><strong><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/10\/Navarin-of-Lamb.pdf\">Navarin of Lamb Printer Friendly Download<\/a><\/strong><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1.5 kg (3 lb) boned shoulder lamb<\/li>\n<li>1 tablespoon butter<\/li>\n<li>1 tablespoon oil<\/li>\n<li>2 tablespoons plain flour<\/li>\n<li>1 teaspoon sugar<\/li>\n<li>1 onion quartered<\/li>\n<li>3 garlic cloves, crushed<\/li>\n<li>3 tablespoons tomato paste<\/li>\n<li>2 celery stalks chopped<\/li>\n<li>1 bay leaf<\/li>\n<li>1 teaspoon dried thyme<\/li>\n<li>\u00bd litre beef, lamb or vegetable stock<\/li>\n<li>1 turnip sliced<\/li>\n<li>8 small onions<\/li>\n<li>8 small potatoes<\/li>\n<li>2 carrots chopped<\/li>\n<li>300 g French beans<\/li>\n<li>1 cup shelled peas<\/li>\n<li>2 tablespoons parsley<\/li>\n<li>Salt and freshly ground black pepper<\/li>\n<\/ul>\n<h2>To Cook<\/h2>\n<p>Pre-heat the oven to 150\u00b0C\/300\u00b0F\/Gas Mark 2. Trim any excess fat from the meat and cut into small chunks.\u00a0 Toss the meat in the seasoned flour.\u00a0 Heat the butter and oil in a heavy based pan.\u00a0 Fry the meat in batches until golden brown and sprinkle with a little sugar.\u00a0 Remove the batches of meat with a slotted spoon to a casserole dish.<\/p>\n<p>When all the meat has been cooked add the onion and celery to the frying pan and cook for a further 5 minutes or so.<\/p>\n<p>Stir in the garlic, thyme, bay leaf, tomato paste and stock and bring to the boil.\u00a0 Pour over the meat in the casserole.\u00a0 Add the turnips to the casserole, cover with a tight fitting lid and bake in the oven for 1 \u00bd\u00a0 hours.<\/p>\n<p>Add the remaining vegetables and cook for a further hour or so until the meat is tender.<\/p>\n<p>Adjust seasonings as required and scatter parsley over to serve.<\/p>\n<p>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
