The rice and\u00a0split peas in this meatball and tomato dish will stretch a small amount of mince into\u00a0a meal that could feed ten people. However, it needs to be planned ahead, since\u00a0the split peas and rice have to be soaked for several hours before using.<\/p>\n<p><strong><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/09\/persian_koftah.pdf\">Persian Koftah (Beef and Rice Meatballs) &#8211; Printer Friendly Download<\/a><\/strong><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 cup split peas, soaked in\u00a0water for 5\u20136 hours<\/li>\n<li>1 cup basmati or long-grain\u00a0rice, soaked with the peas<\/li>\n<li><a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6104\">500 g\/1 lb minced beef<\/a><\/li>\n<li>1 large onion, peeled and\u00a0finely chopped<\/li>\n<li>4 eggs, beaten<\/li>\n<li>2 tablespoons fresh tarragon,\u00a0finely chopped<\/li>\n<li>1 tablespoon mint, finely\u00a0chopped<\/li>\n<li>1 tablespoon parsley, finely\u00a0chopped<\/li>\n<li>salt and pepper<\/li>\n<li>sunflower oil for frying<\/li>\n<li>2 x 220 g\/8 oz cans\u00a0chopped tomatoes<\/li>\n<li>2 tablespoons tomato paste<\/li>\n<\/ul>\n<div>Serves 6<\/div>\n<div><\/div>\n<h2>To Cook<\/h2>\n<p>Preheat the oven to 180\u00b0C\/350\u00b0F\/gas mark 4.\u00a0Drain the peas and rice. In a large bowl combine them\u00a0with the meat, onion, half the beaten egg, herbs and\u00a0seasoning. Mix well and form into meatballs. Use the\u00a0remaining egg mixture to coat each meatball. Heat the<\/p>\n<p>oil in a large pan and add the balls in batches and cook\u00a0until golden, but not necessarily cooked through.\u00a0Combine the tomatoes and the tomato paste. Place the\u00a0koftah (meatballs) into a casserole dish and cover with\u00a0the tomato mixture. Cook in the oven for 11\u20442 hours or so,\u00a0until the tomato sauce has been absorbed.
