It takes only\u00a015 minutes or so preparation time and then it\u2019s left to cook slowly for hours with only\u00a0the effort of plating up involved.<\/p>\n<p><strong><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2013\/09\/Slow-cooked-Beef-Pot-Roast.pdf\">Slow-cooked Beef Pot Roast &#8211; Printer Friendly Download<\/a><\/strong><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>2 tablespoons olive oil<\/li>\n<li>1.5 kg\/ 3lb of beef\u00a0shoulder\/blade roast<\/li>\n<li>1 large onion, peeled and\u00a0sliced<\/li>\n<li>4 cloves of garlic, peeled\u00a0but left whole<\/li>\n<li>3 medium carrots, peeled\u00a0and cut into large chunks<\/li>\n<li>2 celery stalks, sliced<\/li>\n<li>3 potatoes, peeled and\u00a0cut in half<\/li>\n<li>1\u20442 cup red wine<\/li>\n<li>salt and pepper<\/li>\n<li>parsley, finely chopped,\u00a0to garnish<\/li>\n<\/ul>\n<h2>To Cook<\/h2>\n<p>In a heavy-duty cast iron pan such as a Dutch oven\u00a0heat the oil on a medium heat and when it is very hot\u00a0add the meat and leave for a few minutes on each side,\u00a0turning to brown and seal it. When the meat has\u00a0browned all over, remove it to a plate. Add the vegetables\u00a0and saut\u00e9 until the onion is soft. Add the wine and\u00a0seasoning and return the beef to the pot. When it\u00a0reaches simmering point, reduce the heat and cover\u00a0the pot with a tight-fitting lid. Let it cook for 3 hours or\u00a0so until the meat is very tender, then lift the meat on to\u00a0a warm serving platter, cover and keep warm.<\/p>\n<p>Turn the heat high to reduce the liquid to a thick sauce.\u00a0Strain the sauce and serve poured over the beef.\u00a0Garnish with parsley and serve with boiled potatoes.\u00a0A bunch of flavouring herbs may also be added, such\u00a0as marjoram, thyme, parsley and bay leaf tied with\u00a0string.
