{"id":47,"date":"2009-10-06T14:00:11","date_gmt":"2009-10-06T13:00:11","guid":{"rendered":"http:\/\/www.jameswhelanbutchers.com\/info\/?p=47"},"modified":"2014-08-07T15:41:33","modified_gmt":"2014-08-07T14:41:33","slug":"pan-fried-chicken-with-walnut-lemon-dressing","status":"publish","type":"post","link":"https:\/\/www.jameswhelanbutchers.com\/info\/47\/pan-fried-chicken-with-walnut-lemon-dressing\/","title":{"rendered":"James Whelan Butchers: Pan-Fried Chicken with Walnut &#038; Lemon Dressing"},"content":{"rendered":"<p><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-595\" title=\"Pan Fried Chicken Recipe\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2009\/10\/recsm_chickwalpng.png\" alt=\"Pan Fried Chicken Recipe\" width=\"200\" height=\"150\" \/>This makes a great mid-week meal \u2013 it has good flavours and is quick and easy to prepare.\u00a0Any leftover dressing will last for a week in the refrigerator and it also tastes fantastic on chicken salad, in fact it&#8217;s worth making in its own right for that purpose.\u00a0This dish is very good served with spinach on the side and a few new potatoes.<\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2009\/10\/Pan-Fried-Chicken-with-Walnut-and-Lemon-Dressing.pdf\"><strong>Pan Fried Chicken with Walnut and Lemon Dressing -Printer Friendly Download<\/strong><\/a><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>4 <a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6301\">chicken breasts<\/a>, skin on<\/li>\n<li>Salt pepper and lemon juice<\/li>\n<\/ul>\n<p><strong>For the Dressing<\/strong><\/p>\n<ul>\n<li>100g walnuts<\/li>\n<li>2-3 cloves garlic<\/li>\n<li>Juice of a lemon<\/li>\n<li>1 teasp. ground cumin<\/li>\n<li>2 tablesp. coriander, chopped<\/li>\n<li>125ml olive oil<\/li>\n<li>Salt pepper and sugar to taste<\/li>\n<li>4 scallions, chopped<\/li>\n<\/ul>\n<p>Serves 4<\/p>\n<h2>To Cook<\/h2>\n<p>Set the oven to Gas Mark 4, 180\u00b0C, 350\u00b0F.<\/p>\n<p>Season the chicken with salt, pepper and lemon juice. Heat a pan or black grill pan. Cook the chicken skin side down for 4-5 minutes to get a delicious crisp skin. Turn over and cook for another 2-3 minutes. Finish the cooking for another 10-15 minutes in the hot oven.<\/p>\n<p>Meanwhile, make the dressing.<\/p>\n<p>Toast the walnuts in a dry pan, then tip them into the processor with the other dressing ingredients.
