A lovely light dessert, they&#8217;re also perfect for breakfast&#8221;. &#8211; Rachel Allen<\/em><\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/12\/Yoghurt-apricot-and-pistachio.pdf\"><strong>Yoghurt Apricot and Pistachio Pots &#8211; Printer Friendly Download<\/strong><\/a><\/p>\n<h2><span style=\"font-family: Rockwell; color: #3b3b3b;\">Ingredients<\/span><\/h2>\n<ul>\n<li>250g (9oz) dried apricots, halved<\/li>\n<li>200ml (7fl oz) freshly squeezed orange juice<\/li>\n<li>6 tsp runny honey<\/li>\n<li>150ml (5fl oz) natural Greek yoghurt<\/li>\n<li>15g (1\u20442oz) shelled pistachios, roughly chopped<\/li>\n<\/ul>\n<p>Serves 4<\/p>\n<h2>To Cook<\/h2>\n<p>Place the apricots in a small saucepan with the orange juice and 2 teaspoons of the honey. Simmer for about 10 minutes or until soft and plump, then remove from the heat and allow to cool.<\/p>\n<p>Divide the fruit and its juices between the glasses, then add the yoghurt, spooning it over the top of the fruit before drizzling each serving with 1 teaspoon of honey and scattering over the chopped pistachios.<\/p>\n<p>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
