You can vary the herbs suggested here and use your favourites.\u00a0Rack of lamb always looks very impressive on the table but is easy to prepare and serve, which makes it a terrific dinner party main course.\u00a0This may be a simple recipe, but it&#8217;s one that reliably gives a very attractive looking and really delicious result.<\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2009\/10\/Roast-Rack-of-Lamb-with-Herbs.pdf\"><strong>Roast Rack of Lamb with Herbs &#8211; Printer Friendly Download<\/strong><\/a><\/p>\n<h2><span style=\"font-weight: normal;\">Ingredients<\/span><\/h2>\n<ul>\n<li>1 <a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6208\">rack of lamb<\/a>, well trimmed<\/li>\n<li>Salt and black pepper<\/li>\n<li>4 tablesp. parsley, chopped<\/li>\n<li>1 teasp. thyme, chopped<\/li>\n<li>75g breadcrumbs<\/li>\n<li>Knob of butter, melted<\/li>\n<li>1 tablesp. good quality mustard<\/li>\n<\/ul>\n<h2><span style=\"font-weight: normal;\">To cook<\/span><\/h2>\n<p>Preheat oven to 200\u00b0C (400\u00b0F) Gas Mark 6.<\/p>\n<p>Season the lamb with salt and pepper. Place in the preheated oven for ten minutes. Meanwhile make up the topping &#8211; combine the herbs, breadcrumbs, seasoning and butter and mix well.<\/p>\n<p>After 10 minutes remove the lamb from the oven. Spread the mustard over the top of the lamb. Spoon on the herb and breadcrumb mixture and press well onto the lamb. Place it back in the oven and roast for another 25 minutes. Allow to sit for 5-10 minutes before carving into single cutlets.<\/p>\n<h2><span style=\"font-weight: normal;\">Serving Suggestions<\/span><\/h2>\n<p>Delicious served with a baked potato and salad or roasted vegetables &#8211; simply toss some chopped peppers, courgettes, tomatoes and red onions in a little olive oil.
