{"id":2737,"date":"2011-04-29T16:53:54","date_gmt":"2011-04-29T15:53:54","guid":{"rendered":"http:\/\/www.jameswhelanbutchers.com\/info\/?p=2737"},"modified":"2014-08-07T11:04:46","modified_gmt":"2014-08-07T10:04:46","slug":"bacon-baps-with-scrambled-eggs-and-tomato-chilli-jam","status":"publish","type":"post","link":"https:\/\/www.jameswhelanbutchers.com\/info\/2737\/bacon-baps-with-scrambled-eggs-and-tomato-chilli-jam\/","title":{"rendered":"James Whelan Butchers: Bacon Baps with Scrambled Eggs and Tomato Chilli Jam"},"content":{"rendered":"<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/03\/Bacon-Baps-with-Scrambled-Eggs-and-Chilli-Jampsd.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-2739\" title=\"Bacon Baps with Scrambled Eggs and Chilli Jam\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/03\/Bacon-Baps-with-Scrambled-Eggs-and-Chilli-Jampsd.jpg\" alt=\"Bacon Baps with Scrambled Eggs and Chilli Jam\" width=\"225\" height=\"169\" \/><\/a>These filled baps are packed full of flavour and really easy to make.\u00a0 The Tomato Chillli Jam will keep in the fridge for a couple of weeks.<\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2011\/03\/Bacon-Baps-with-Scrambled-Eggs-and-Chilli-Jam.pdf\"><strong>Bacon Baps with Scrambled Eggs and Chilli Jam &#8211; Printer Friendly Download<\/strong><\/a><\/p>\n<h2><span style=\"font-weight: normal;\">Ingredients<\/span><\/h2>\n<ul>\n<li><a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6429\">8 rashers<\/a><\/li>\n<li>6 eggs, lightly beaten<\/li>\n<li>Salt and freshly-ground black pepper<\/li>\n<li>Butter<\/li>\n<li>4 baps<\/li>\n<\/ul>\n<p><strong>Chilli Jam<\/strong><\/p>\n<ul>\n<li>1-2 red chillies, roughly chopped<\/li>\n<li>2 garlic cloves, roughly chopped<\/li>\n<li>4 tablesp vinegar<\/li>\n<li>2 x 400g tins of chopped tomatoes<\/li>\n<li>4 tablesp. brown sugar<\/li>\n<li>2 tablesp. chopped coriander<\/li>\n<\/ul>\n<p>Serves 4<\/p>\n<h2><span style=\"font-weight: normal;\">To Cook<\/span><\/h2>\n<p><span style=\"font-weight: normal;\"><strong>To make the Tomato Chilli Jam<\/strong>, simply pop the red chillies into a food processor along with the garlic and vinegar and whiz to a pur\u00e9e.\u00a0 Tip into a saucepan and add the chopped tomatoes and brown sugar.\u00a0 Simmer gently for an hour, stirring occasionally.\u00a0 Take off the heat, add the chopped coriander and taste for seasoning.\u00a0 Allow to cool before storing in the fridge.<\/span><\/p>\n<p>Grill the rashers until crispy. While they are cooking melt a knob of butter in a saucepan and add the lightly beaten eggs.\u00a0 Season with salt and pepper and cook over a medium heat for 2-3 minutes, stirring all the time, until the eggs are just set.\u00a0 Slice and toast the baps.<\/p>\n<p>Put a spoonful of relish on the botton half of each bap, divide the scrambled eggs between the four baps, then add the rashers and finally the tops of the baps.<\/p>\n<p>Delicious any time of the day!<\/p>\n<p>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
