Really &#8211; try it and see for yourself.\u00a0The recipe here will serve 10 people so it&#8217;s ideal for a family occasion or a party.\u00a0 I think this works best when the beef is served rare but it will be good served any way once it&#8217;s not incinerated!<\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2009\/11\/Roast-Rib-Eye-of-Beef.pdf\"><strong>Roast Rib Eye of Beef &#8211; Printer Friendly Download<\/strong><\/a><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1 <a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6106\">Rib Eye of beef<\/a>, about 2.5kg<\/li>\n<li>\u00bd cup crushed peppercorns<\/li>\n<li>3 tbsps olive oil<\/li>\n<li>100ml olive oil<\/li>\n<li>8 unpeeled garlic cloves<\/li>\n<li>1.5kg equal sized potatoes suitable for roasting, unpeeled and quartered<\/li>\n<li>5 red\/yellow peppers deseeded and quartered<\/li>\n<li>10 shallots, peeled and halved<\/li>\n<li>120g semi sun-dried tomatoes<\/li>\n<li>200g pesto<\/li>\n<li>handful of basil<\/li>\n<li>toasted pine nuts<\/li>\n<\/ul>\n<p>Serves 10<\/p>\n<h2>To Cook<\/h2>\n<p>Preheat oven to 230\u00baC<\/p>\n<p>Rub the <a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6106\">Rib Eye<\/a> with a little olive oil, then sprinkle with crushed peppercorns.<\/p>\n<p>Preheat roasting tray with the olive oil. When the oil is hot place the beef on the roasting tray and return to oven, turning meat every 5 minutes to brown all over, after 15 minutes reduce the temperature to 190\u00baC and cook according to weight and how you prefer your beef cooked:<\/p>\n<ul>\n<li><strong>Rare:<\/strong> 8-10 minutes per 450g<\/li>\n<li><strong>Medium:<\/strong> 10-12 minutes per 450g<\/li>\n<li><strong>Well-done: <\/strong>15-18 minutes per 450g<\/li>\n<\/ul>\n<p>Combine oil, garlic, potatoes, onions and peppers in a large bowl and season. Place on a heated roasting tray and roast for 45 minutes at 190\u00baC until potatoes are cooked, turning occasionally.<\/p>\n<p>When beef is cooked to your liking, remove from oven, cover with foil and allow relaxing for 10 minutes.<\/p>\n<p>Slice the beef thinly and transfer to warm plates.<\/p>\n<p>When vegetables are cooked remove from oven and stir in pesto and semi sun-dried tomatoes, transfer to a warm serving plate and sprinkle generously with pine nuts and basil leaves.<\/p>\n<p>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
