{"id":238,"date":"2010-05-14T13:44:11","date_gmt":"2010-05-14T12:44:11","guid":{"rendered":"http:\/\/www.jameswhelanbutchers.com\/info\/?p=238"},"modified":"2014-08-07T15:40:42","modified_gmt":"2014-08-07T14:40:42","slug":"spicy-new-season-lamb","status":"publish","type":"post","link":"https:\/\/www.jameswhelanbutchers.com\/info\/238\/spicy-new-season-lamb\/","title":{"rendered":"James Whelan Butchers: New Season Spring Lamb with a Touch of Spice"},"content":{"rendered":"<p><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-587\" title=\"Recipe for Leg of Lamb\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2010\/05\/recsm_lamb2.png\" alt=\"Recipe for Leg of Lamb\" width=\"200\" height=\"150\" \/>A whole leg of new season Irish lamb is cooked with a little twist here, and it&#8217;s equally delicious whether you roast it or cook it on the barbecue.\u00a0As a bonus the next day the lamb (if there is any left over!) will be great cold with a baked potato and the last slices will make gourmet sandwiches.<\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2010\/05\/New-Season-Spring-Lamb-with-a-Touch-of-Spice.pdf\"><strong>New Season Spring Lamb with a Touch of Spice &#8211; Printer Friendly Download<\/strong><\/a><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li><a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6201\">1 leg of Lamb, boned and butterflied<\/a><\/li>\n<li>2 tablesp. curry paste<\/li>\n<li>3 tablesp.olive oil<\/li>\n<li>2-3 cloves garlic, chopped<\/li>\n<li>1x 250g (10 oz) tub thick Greek- style yoghurt<\/li>\n<li>3 tablesp. mint chopped<\/li>\n<li>Salt and black pepper<\/li>\n<\/ul>\n<p>Serves 6-8<\/p>\n<h2>To Cook<\/h2>\n<p><strong>A day ahead<\/strong>: Mix the curry paste with 2 tablesp. of the oil and the garlic, spread it over the lamb, cover and leave in the fridge overnight.<strong><br \/>\n<\/strong><\/p>\n<p>Before beginning your preparation the next day, set the oven to Gas Mark 6, 200\u00baC (400\u00baF) \/ heat or light the barbecue.<\/p>\n<p><strong>To roast:<\/strong><br \/>\nHeat a large pan, place the lamb on the hot pan, season and brown well on both sides then place on a roasting dish and cook for 45 mins approximately for pink lamb.<\/p>\n<p><strong>To barbecue:<\/strong><br \/>\nPlace the lamb on the hot barbecue and cook for 20\/25 minutes approximately on each side over a medium heat.<\/p>\n<p><strong>For the Dressing<\/strong><\/p>\n<p>Mix the yoghurt with 2 tablesp. mint, 1 tablesp. oil and seasoning.<\/p>\n<h2><strong>How to Serve<\/strong><\/h2>\n<p>If you have roasted the lamb, boil up the pan juices with a tablespoon of redcurrant jelly (optional) and serve with the sliced lamb. Before carving sprinkle the last tablesp. mint over the lamb.
