Discard the water the next day.\u00a0I have seen a similar recipe that adds a glass of white wine to the bacon when boiling it &#8211; haven&#8217;t tried this yet but let me know how you get on if you do.<\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2009\/10\/Mustard-glazed-bacon.pdf\"><strong>Mustard Glazed Bacon &#8211; Printer Friendly Download<\/strong><\/a><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li>1.2kg <a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6405\">back bacon<\/a><\/li>\n<li>4 large carrots, roughly sliced<\/li>\n<li>2 onions, quartered<\/li>\n<li>3 sticks celery, roughly chopped<\/li>\n<li>1 bay leaf<\/li>\n<li>a few sprigs of fresh parsley<\/li>\n<li>4 black peppercorns<\/li>\n<li>4 tbsp runny honey<\/li>\n<li>1 tbsp grainy mustard<\/li>\n<li>finely grated rind of half an orange<\/li>\n<li>1-2 tbsps freshly squeezed orange juice<\/li>\n<li>20 cloves<\/li>\n<\/ul>\n<h2>To Cook<\/h2>\n<p>Put the bacon in a large saucepan with the vegetables, bay leaf, parsley and peppercorns. Cover with cold water and slowly bring to the boil.\u00a0 Skim off any scum, and simmer gently for 40 minutes.<\/p>\n<p>Remove from the heat and leave the bacon to cool in the water for about 2 hours.<\/p>\n<p>Preheat the oven to 200\u00baC \/ gas 6.<\/p>\n<p>Carefully trim the rind off the fat. Score the fat into large diamonds with a sharp knife, and stud the diamonds with the cloves.<\/p>\n<p>In a small bowl mix together the honey, mustard, orange rind and enough juice to provide a spreadable mixture.
