{"id":1408,"date":"2010-12-09T16:00:07","date_gmt":"2010-12-09T15:00:07","guid":{"rendered":"http:\/\/www.jameswhelanbutchers.com\/info\/?p=1408"},"modified":"2014-08-07T15:19:56","modified_gmt":"2014-08-07T14:19:56","slug":"grilled-chicken-with-potato-wedges-and-stir-fry-vegetables","status":"publish","type":"post","link":"https:\/\/www.jameswhelanbutchers.com\/info\/1408\/grilled-chicken-with-potato-wedges-and-stir-fry-vegetables\/","title":{"rendered":"James Whelan Butchers: Grilled Chicken with Potato Wedges and Stir Fry Vegetables"},"content":{"rendered":"<p><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-1411\" title=\"Grilled Chicken with Potato wedges and stir fry vegetables\" src=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2010\/12\/grilled-chicken-wedges-and-stir-fry1.jpg\" alt=\"Grilled Chicken with Potato wedges and stir fry vegetables\" width=\"225\" height=\"169\" \/>This is a great recipe for the family and is ready in only 45 minutes!<\/p>\n<p><a href=\"https:\/\/www.jameswhelanbutchers.com\/info\/wp-content\/uploads\/2010\/12\/Grilled-Chicken-with-Potato-Wedges-and-Stir-Fry-Vegetables.pdf\"><strong>Grilled Chicken with Potato Wedges and Stir Fry Vegetables &#8211; Printer Friendly Download<\/strong><\/a><\/p>\n<h2>Ingredients<\/h2>\n<ul>\n<li><a href=\"https:\/\/www.jameswhelanbutchers.com\/proddetail.php?prod=6639\">4 chicken breasts<\/a><\/li>\n<li>5 potatoes (approx), washed and cut into wedges<\/li>\n<li>1 teasp. paprika<\/li>\n<li>Sea salt, olive oil<\/li>\n<li>Sprigs of rosemary<\/li>\n<li>Juice of one lemon<\/li>\n<li>Seasonal vegetables i.e. broccoli, courgettes and red pepper \u2013 chopped finely<\/li>\n<\/ul>\n<p>Serves 4<\/p>\n<h2>To Cook<\/h2>\n<p>Set the oven at Gas Mark 6 200C (400F).\u00a0 Place the potato wedges in a bowl.\u00a0 Season with the paprika, sea salt and olive oil.\u00a0 Mix well to give the potatoes an even coating.\u00a0 Place on a baking sheet with a few sprigs of rosemary and bake for 45 minutes.<\/p>\n<p>While they are cooking, prepare the chicken.\u00a0 Heat a heavy pan\/grill pan.\u00a0 Season the chicken breasts and drizzles with olive oil and lemon juice.\u00a0 Place on the hot pan and brown well on both sides, reduce the heat and continue to cook for 15-20 minutes approx, until fully cooked.<\/p>\n<p>For the last 5 minutes heat a large pan or wok.\u00a0 Add some oil and stir fry the vegetables for 2-3 minutes.<\/p>\n<p>Serve the chicken with potatoes and vegetables, drizzle with a little more olive oil and lemon if you wish.<\/p>\n<p>We hope you enjoyed reading this post by Pat Whelan of James Whelan Butchers.
