At Rathduff, every field has a story. Some are written by the cattle that graze them, others by the trees that have stood watch over the land for generations. This summer, one particular field is beginning a new chapter \u2014 one that is buzzing with life.<\/p>\n
Nestled within Rathduff is a field home to approximately 30 mature lime trees. Their fragrant blossoms are a remarkable source of nectar, attracting pollinators from far and wide. Recognising the unique opportunity these trees present, we have partnered with local beekeepers Aoife and Miche\u00e1l Mac Giolla Coda of Galtee Honey Farm<\/strong> to create something truly special: a distinctive Rathduff Lime Honey<\/strong>.<\/p>\n Aoife and Miche\u00e1l are passionate beekeepers whose commitment to quality and sustainability has earned Galtee Honey Farm a respected reputation throughout Tipperary and beyond. Aoife is also a valued member of the Tipperary Food Producers Network<\/strong>, an organisation dedicated to celebrating and supporting the county’s exceptional food producers.<\/p>\n Together, we share a belief that great food begins with respect for the land, biodiversity, and the people who care for both.<\/p>\n \n Earlier this season, ten bee hives were carefully positioned within the lime tree field at Rathduff. As the trees come into bloom, the bees will gather nectar from the fragrant flowers, transforming it into a honey that reflects the unique character of this landscape.<\/p>\n Lime blossom honey is prized across Europe for its delicate floral notes, subtle citrus undertones, and light, refreshing flavour. The hope is that the combination of Rathduff’s mature lime trees and the expertise of Galtee Honey Farm will produce a honey that is unmistakably Tipperary.<\/p>\n While the prospect of producing our own lime honey is exciting, the project is about more than honey alone.<\/p>\n Bees play a vital role in supporting biodiversity and healthy ecosystems. By introducing hives to Rathduff, we are helping to encourage pollination throughout the surrounding landscape, benefiting wildflowers, hedgerows, and other plant life across the farm.<\/p>\n It’s a small but meaningful step in continuing to nurture the natural environment that has sustained Rathduff for generations.<\/p>\n Over the coming months, we’ll be following the progress of the hives and sharing updates from the field. From the flowering of the lime trees to the first harvest, we’re excited to document the journey and celebrate the collaboration between Rathduff and Galtee Honey Farm.<\/p>\n The result will be more than just a jar of honey.
